CHOCOLATE CRINKLE COOKIES

One of my favorite cookies to bake during the holidays are chocolate crinkle cookies. They are the perfect mix of a brownie and cookie – super chocolatey with a bit of a crunchy outer shell. They are pretty easy to make, with the hardest part being waiting for the dough to chill. Check out this recipe (from Simply Recipes) and give it a try. Servings: 50 cookies

Ingredients

  • 1 cup natural unsweetened cocoa powder
  • 1 1/2 cups white granulated sugar
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 tsp. vanilla extract
  • 2 cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 350 degrees F. Line two baking trays with parchment paper.
  2. Beat together cocoa powder, white sugar, and vegetable oil in bowl of electric mixer fitted with the paddle attachment, until it comes together into a shiny, gritty, black dough of sorts (you can also use a hand mixer with the regular attachments).
  3. Add the eggs, one at a time, mixing for 30 seconds each.
  4. Add the vanilla and beat in thoroughly.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Beat dry ingredients into cocoa oil mix on low speed until just combined.
    Don’t over beat.
  7. Cover the dough with plastic wrap and refrigerate for at least 4 hours.
  8. When ready to bake, place the powdered sugar in a wide bowl.
  9. Using a teaspoon, scoop out clumps of the chilled dough and roll them into 1-inch sized balls using your hands. Do several at a time and drop them into the powdered sugar as you go (the dough will be sticky, so it’s useful to roll the dough in batches).
  10. Roll the balls in the powdered sugar and place them on the baking tray spaced a few inches apart.
    If you are baking with a partner, I suggest dividing and conquering – have one person roll the dough and the other roll the balls in the sugar and place on the tray.
  11. Bake for 10-13 minutes.
  12. Cookies will be good for 1 week.
