DELICIOUS CHOCOLATE CHIP MUFFINS

Being at home has inspired me to cook and bake more. With extra time during the day, it’s the perfect opportunity to get better at this skill. Tonight I was in the mood for chocolate chip muffins – one of my favorite desserts and breakfast foods. Luckily, I found a recipe (on Allrecipes) that called for the exact chocolate chips we had in the pantry. These muffins are so soft in the center and taste so delicious, I had to share!

Total Time: approx. 40 minutes
Servings: 12 standard-sized muffins or 6 large muffins (depending on what pan you have)

Ingredients

Muffins

  • 2 cups all-purpose flour
  • 1/2 cup white sugar
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 1 egg
  • 3/4 cup mini semi-sweet chocolate chips

Topping (optional)

  • 3 tbsp. white sugar
  • 2 tbsp. light brown sugar

Instructions

  1. Preheat oven to 400 degrees F (205 degrees C). Grease the bottoms (only) of muffin pan or line with baking cups.
  2. In a medium bowl, mix the following dry ingredients: flour, 1/2 cup white sugar, baking powder, chocolate chips, and salt. Mix well.
  3. In a small bowl, combine the following wet ingredients: milk, oil, and egg. Blend well.
  4. Add the wet ingredients mixture to the medium bowl with the dry ingredients. Stir until dry ingredients are moistened. The batter will be lumpy.
  5. Fill muffin pan 2/3 full. Before baking, mix 3 tablespoons white sugar and 2 tablespoons light brown sugar and sprinkle on the top of each muffin (optional).
  6. Bake for 20-25 minutes. Check oven around the 22-minute mark. The muffins are done when a toothpick inserted in the center, comes out clean.
  7. Cool 2-3 minutes before removing from pan.
